At Laberinto Chocolates, every bar begins as a story — one that starts far from the coast of Manilva, in the lush cacao regions where farmers cultivate the legendary Sur del Lago cocoa.
We believe true chocolate is crafted, not manufactured. That’s why we create every piece bean-to-bar, controlling each step of the journey to preserve the soul of the cacao and reveal its pure, natural flavor.
Bean to bar PROCESs
Sourcing the beans
Our chocolate begins with carefully selected Sur del Lago cacao beans, grown in small farms known for their exceptional quality and ethical cultivation.
Each bean carries centuries of heritage — descended from the mythical Guasare cacao, one of the world’s oldest varieties.
We only work with farms that grow their cacao sustainably and slave-free, ensuring respect for both people and the land.
ROASTING
Once the beans arrive in Manilva, we roast them in small batches, gently awakening their natural aromas — nuts, fruits, and warm earth.
Each roast is adjusted by hand to highlight the cocoa’s unique Andalusian accent.
Cracking & Winnowing
After roasting, the beans are cracked open and separated from their shells, revealing pure cocoa nibs — the heart of chocolate.
Grinding & Refining
he nibs are slowly ground with organic cane sugar until they become smooth, liquid chocolate.
This long, careful process develops depth, texture, and balance.
Conching
The chocolate is then conched for minimum of 30 hours, gently mixed and aerated to refine aroma and texture.
Here, the raw cacao becomes elegant and harmonious.
Tempering
Tempering gives chocolate its shine, crisp snap, and silky melt.
By heating and cooling precisely, we ensure every bar has the perfect structure.
Molding & Finishing
Finally, we pour the chocolate into molds, sometimes adding local touches — almonds, orange peel, figs, or sea salt.
Each bar is finished and wrapped by hand in our Manilva workshop.
